- ½ cup coconut milk
- 2 cups frozen mixed vegetables
- 1 potato
- 1 onion
- ¼ cup rice
- ½ tbsp curry
- ¼ bunch coriander
- ⅛ lemon
- 2 tbsp rapeseed oil
- salt
- ½ cup water
2. Preparing
wash rice, potato, tomato and coriander; cook rice; peel potato; chop veggies and coriander

heat oil and brown onion; add curry, potato, vegetables and salt; add coconut milk and cook for 10 min; serve with rice and coriander
